American Wagyu Steak Sandwich

Ingredients
1 Snake River Farms waygu rib eye
Smoke Mafia Steak rub
Sweety drop peppers
Onions
Serrano Pepper
Creamy queso sause
Buttered soboa bread

Get the cast iron up tp 600 degrees and add a spoonful of pure tallow.

For the perfect medium-rare (less emphasis on the medium). Start with the sear.
10 seconds on the fat cap.
80 seconds on each side.

Into the oven at 400 degrees for two minutes, forty second.

Into a covered resting pan for four minutes.

Time to build the sandwich.

Needed to harvest some of the crops, so I made a tomato relish to snack on with some chips.
- 1 cup tomatoes finely diced
- 1/2 cup yellow onions finely diced
- 1 jalapeño pepper finely diced, seeds removed
- 1/2 tsp celery seeds
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 tbsp sugar
- 2 tbsp red wine vinegar
